Hotel, Resort and Restaurant Management Focuses on Developing Students’ Leadership Skills

Centennial College prides itself on catering to a wide range of students. As such, it offers programs that are exclusively designed for those who have completed a college or university program, or have some sort of partial post-secondary education and experience in the industry associated with their program.

One such program is the Hotel, Resort and Restaurant Management undertaking, which allows students to graduate in two short semesters and launch careers in areas such as: hotel and restaurant general management, human resources management, sales and marketing management, convention services management, housekeeping management, and hotel revenue and financial management.

Each hotel management course in this offering consists of both theory and practical application of that theory. Led by industry-experienced instructors, students use operational lab practice facilities, a full service student-operated restaurant, modern computer labs that are continually updated and an on-site conference centre to enhance their learning.

Here are some of the courses featured in this offering:

Human Resources and Labour Relations Management: All of the management topics relevant to this area of the industry are covered, including staffing, employee training and development, appraisal and reward, and career planning in effectively employing an organization’s human resources toward the accomplishment of organizational goals and business strategy. Students use case studies and exercises to get a grasp on issues such as employee motivation, conflict resolution, performance management, labour relations and negotiations.

Hospitality Safety, Security, Risk and Crises Management: Through an understanding and subsequent management of crisis and disasters, their impact on the hospitality and tourism industry can be reduced. Students learn to respond and control damage to the organization’s reputation, financial condition, market share, and brand value. This course examines emergency preparedness plans, legal and managerial strategies and operational procedures to minimize safety and security risks faced by the hospitality industry.

Hospitality Revenue and Distribution Management: Optimizing hotel revenues by using forecast information in capacity management, discount allocation, duration control and other yield management tools is the focus of this course. Students also become familiar with the importance of managing reservations and rate allocation to global distribution systems, third party Internet reservation systems, direct-consumer online distribution, rate integrity and internet rate strategies through a website optimization strategy.

Hotel, Resort and Restaurant Field Placement: Undeniably the most practical course in this offering, the field placement enables the student apply what they have learned, better understand the dynamics of the industry, increase their knowledge of industry practices and provides a competitive advantage of experience in the job market.

Graduates of this hotel management program have been hired by well known companies such as: Delta Hotels & Resorts, Fairmont Hotels & Resorts, Four Seasons Hotels & Resorts, InterContinental Hotel Group, Marriott Hotels & Resorts, Starwood Hotels & Resorts, Hyatt Hotels & Resorts, Wyndham International and Choice Hotels International.
